Velasco’s Catering was founded by Ninfa Sue Velasco in 2003. Born in Odessa, TX in 1966 to parents Manuel Galindo Velasco and Manuela Ontiveros. Her passion for cooking started at the age of 8 years old helping her father who loved to cook. She was taught to perfect her dishes by her grandmother “MamaTita Ontiveros” at very young age and since then, has catered at events ranging from small, family-style to events with well over 1,000 hungry guests. Ninfa’s Family Traditional West Texas Recipes are so delicious that they have not changed over the years. From West Texas to Dallas / Fort Worth and beyond, guests fall in love with her taste and unique style.
Her son Straton Smith was born in 1988 and has inherited her passion for cooking. Ninfa’s fondest memory of Straton is of him making her a hot mexican breakfast as soon when he was just 7 years old. He was able to make full dishes by the age of 8, and today continues the traditional family recipes and unique style Velasco’s Catering has created.
Ninfa operates Velacso’s Catering in the West Texas market while Straton is dedicated to North Texas, mainly serving the Dallas / Fort Worth metroplex.
